Habitat
The most picked and consumed mushroom in the world. It grows in small troops in the undergrowth of coniferous or deciduous trees, particularly where birches are present.
Fruit body
This medium-sized chanterelle can be recognized by its yellow-colored cap and stipe, growing scattered in a wide variety of undergrowth, from the end of June to the beginning of September.
Cap
2.5 to 11 cm across. Yellow to orange-yellow, generally flat at maturity, but can become funnel-shaped when growing rapidly.
Margin
Incurved when young, spread out thereafter.
Hymenium surface
Fruiting surface yellow to pale peach, to grayish. Well developed false gills that run down the stem, deep, branching towards the margin and weakly interveined.
Stalk
3-7.5 X 0.5-2.5 cm. Pale to dark yellow, enlarged upwards.
Flesh
Thick, firm, white to pale yellow, immutable.
Comments
The chanterelle is little parasitized by insect larvae; young fruiting bodies keep for more than 10 days in the refrigerator; in addition to its taste, this is what makes it so popular.
